Preheat oven to 160C. Using an electric mixer, cream butter and sugar until light and creamy for approximately 5 minutes.
Add the egg, vanilla essence/extract and lemon rind and beat to combine.
Remove bowl from mixer. Add flour and mix with a spatula or large spoon until a smooth dough forms.
Roll tablespoonfuls of dough into balls and place on baking trays lined with non-stick baking paper. Note: the dough will be light and a little sticky but should still roll into balls.
Flatten slightly and then press your finger or knuckle into the centre of each biscuit to make a small indent.
Fill each indent with ½ teaspoon of jam and then bake for 14-15 minutes or until light golden in colour.
Allow to stand for 5 minutes on baking trays and then transfer to wire racks to cool.
Makes approximately 24.
