Lemon and Coconut Bliss Balls …
- 1 ½ cups shredded coconut (or substitute desiccated coconut)
- 3 ½ cups Corn Flakes
- 1 x 400g can Sweetened Condensed Milk
- 2 tablespoons lemon zest (from 1 lemon)
- 3 tablespoons freshly squeezed lemon juice (from 1 lemon)
- 1 teaspoon vanilla extract
- ½ cup desiccated coconut, extra
- Place coconut and Corn Flakes into food processor and blend for 30 seconds (just long enough to reduce the Corn Flakes to large crumbs).
- Add Sweetened Condensed Milk, lemon zest, lemon juice and vanilla extract and process until mixture is firm and well combined.
- Roll into bit sized balls and then roll in extra desiccated coconut.
- Store in the refrigerator. This recipe will produce approx. 30 balls (depending on the size you make them) and is suitable to freeze.
