Choc Orange Choc Chip Cookies …

Ingredients …
  • 3 ½ cups plain flour
  • 2 teaspoons cornflour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup brown sugar, firmly packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 2 tablespoons orange juice, freshly squeezed
  • 1 x 200g packet chocolate chips
Method …
  1. Preheat oven to 180C and line baking trays with baking paper.
  2. In a large mixing bowl, combine plain flour, cornflour, baking powder and salt.
  3. In the bowl of an electric mixer, whip the butter, white sugar and brown sugar, until light and fluffy for approximately 4 minutes.
  4. Mix in eggs, one at a time, mixing well after each additiion.
  5. Mix in vanilla extract, orange zest and orange juice.
  6. Remove bowl from mixer, add dry mixture and chocolate chips and stir gently until just combined.
  7. Drop tablespoons of mixture onto prepared baking trays. Leave a little space between each cookie as they will spread while baking. Bake for approximately 10 minutes.
  8. Remove cookies from oven, allow to cool for 2 minutes on baking trays before transferring to a wire rack to cool completely.
  9. These cookies are suitable to freeze and the mixture will make 50 – 55 cookies (depending on their size).
