Pork Fillet with Mango, Coconut and Chilli …

Ingredients …
  • 1 teaspoon olive oil
  • 1 small Spanish onion, finely chopped
  • 1 clove garlic, crushed
  • 1 teaspoon ginger, grated
  • 1 tablespoon shredded coconut
  • 1 punnet mixed cherry tomatoes, chopped into quarters
  • ½ long red chilli, seeded and finely chopped
  • ½ small capsicum, any colour, seeded and diced
  • 1 large mango, peeled and diced
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • 1 ½ tablespoons orange marmalade
  • 1 clove garlic, crushed, extra
  • 1 teaspoons ginger, grated, extra
  • 500g piece pork fillet
  • fresh coriander leaves, chopped
  • lime wedges, to serve
Method …
  1. Line an oven tray with baking paper and preheat oven to 180C.
  2. Heat oil in fry pan, add onion and cook, stirring for approximately 3 minutes. Add garlic and ginger and cook, stirring for one more minute.
  3. Transfer mixture to a small bowl and cool for approximately 15 minutes. Add shredded coconut, cherry tomatoes, chillies, capsicum, mango and lime juice and stir to combine.
  4. Combine olive oil, orange marmalade, extra grated ginger and extra garlic in a small bowl. Spread marmalade mixture over pork fillet and place on baking tray. Roast for 20 – 25 minutes or until just cooked through. Once during cooking, rotate pork fillet and roll in marinade. Remove from baking tray, cover with alfoil and allow to stand for 5 minutes. Slice pork fillet thickly. Serve with salad and mango and coconut mixture spooned over the pork. Garnish with chopped fresh coriander and lime wedges.
