Preheat oven to 180C and line a 12-cup muffin tray with wrappers.
Combine the almond meal, rolled oats, nutmeg, cinnamon, baking powder, walnuts, dates, chocolate chips, zucchini and carrot in a large bowl.
In a separate bowl, combine the eggs, butter, maple syrup and vanilla extract and whisk together.
Pour the wet ingredients into the dry ingredients and mix until just combined. The mix will be thick and lumpy.
Spoon the mixture evenly between the 12 wrappers in the muffin tray and bake for approximately 25 – 30 minutes. The muffins should be browned on the top and a skewer inserted into the centre of the muffin should come out cleanly.
