Preheat oven to 180C (fan-forced). Lightly spray a 20cm round cake tin with cooking spray and line the base with baking paper cut to fit.
Add all cake ingredients to the bowl of an electric mixer. Beat on a low speed until all ingredients are combine, then increase speed to medium. Beat for approximately 3 – 4 minutes or until the mixture is smooth and has lightened in colour.
Bake for 35 – 40 minutes or until a skewer inserted into the middle of the cake comes out cleanly.
Remove from the oven and allow to stand for approximately 2 minutes. Turn cake onto a wire rack to cool completely before icing.
To make the icing, sift the icing sugar into a small bowl. Add butter and orange juice and whisk with a fork until smooth. Spread icing evenly over the top of the cake and sprinkle with desiccated coconut.
