Malteser Muffins …

- 2 cups self-raising flour
- ⅓ cup cocoa
- ⅓ cup castor sugar
- 1 ½ cups maltesers, roughly chopped
- ½ cup butter, melted
- 1 cup milk
- 2 eggs
- Preheat oven to 190C (fan forced) and spray a 12-hole muffin pan lightly with cooking spray.
- Combine self-raising flour, cocoa, castor sugar and maltesers in a bowl and make a well in the centre.
- Whisk melted butter, milk and eggs together.
- Pour wet ingredients into dry ingredients and gently fold together until just combined. Be careful not to over mix, the mixture should be lumpy.
- Distribute mixture evenly between 12 muffin holes and bake for approximately 15 – 16 minutes.
- Remove from oven when cooked and allow to stand in muffin tray for 3 – 4 minutes before transferring to a wire rack to cool.
- These muffins are suitable to freeze.
