Dark Chocolate and Orange Muffins …

Ingredients …
  • 2 cups self-raising flour
  • ½ cup cocoa powder
  • ¾ cup castor sugar
  • 1 cup light sour cream
  • 2 eggs
  • 2 tablespoons orange zest
  • 1 teaspoon vanilla extract
  • ½ cup vegetable oil
  • ¼ cup orange juice, freshly squeezed
  • ¾ cup dark chocolate chips
Method …
  1. Preheat oven to 180C (fan forced) and line a 12-hole muffin pan with large wrappers.
  2. Place self-raising flour, cocoa and castor sugar in a bowl and stir to combine.
  3. Place sour cream, eggs, orange zest, vanilla extract, vegetable oil and orange juice in a separate bowl/jug and whisk until the mixture is smooth.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Add chocolate chips and stir through.
  6. Spoon the mixture evenly between the 12 muffin holes and bake for approximately 18 – 20 minutes.
  7. Once cooked, remove from oven. Allow to stand in the muffin tray for a couple of minutes before transferring muffins to wire racks to cool completely.
