Slow Cooker Chicken Tikka Masala …
Ingredients …
  • 900g chicken thigh fillets (without the skin)
  • 3 small brown onions, peeled and sliced
  • 2 cloves garlic, crushed
  • 1 x 800g can diced (or crushed) tomatoes
  • ½ cup Tikka Masala Curry Paste (I use Pataks)
  • 2 cups sweet potato, chopped into large chunks
  • ⅓ cup cream
  • ½ cup fresh coriander, roughly chopped
Method …
  1. Trim chicken thigh fillets of excess fat and sinew and chop into very large pieces.
  2. Add chicken, brown onions, garlic, tinned tomatoes and tikka masala curry paste to a slow cooker. Cover and cook on low for 6 hours.
  3. Just before serving, steam the sweet potato and add to the slow cooker. Stir through the cream.
  4. Serve with rice and sprinkle with fresh coriander.
