Lightly spray 2 small loaf tins and line the base and the 2 long sides of the tin with baking paper. Allow the baking paper to extend over each edge by roughly 2 cms.
In a large bowl, add the self-raising flour, mixed spice, brown sugar, castor sugar and bicarbonate of soda. Stir to combine.
Make a well in the centre of the dry ingredients and add the vegetable oil, eggs and grated apples. Mix well to combine
Spread the mixture evenly between the 2 loaf tins and level the top of each loaf with a spoon.
Bake for 35 – 40 minutes until golden on the top and test with a skewer which should come out cleanly.
Remove from the oven and stand in the loaf tins for approximately 10 minutes. Transfer to a wire rack, removing the baking paper, to cool completely. Slice into thick slices and either serve or freeze.
