1 x 225g can pineapple slices, chopped into small pieces
1 tablespoon olive oil
1 medium onion, peeled and chopped finely
500g pork mince ** I actually used a mince from Coles that was a blend of 70% pork and 30% beef **
1 clove garlic, crushed
1 tablespoon brown sugar
2 tablespoons soy sauce
1 tablespoon lime juice
⅓ cup tomato sauce
½ cup grated carrot
1 large red chili, seeds removed and chopped finely
small tortillas or taco shells

cherry tomatoes, chopped
cheddar cheese, grated
¼ cup fresh coriander, roughly chopped
Method …
Remove pineapple slices from can and chop into small pieces. Put aside and reserve ⅓ cup of juice from the can.
Add olive oil and onion to fry pan and sauté until onion is transparent.
Add mince to pan and, using a fork to break it up, cook until browned all over.
Add garlic, brown sugar, soy sauce, reserved pineapple juice, lime juice and tomato sauce. Stir until combined and simmer gently until most of the liquid has evaporated.
Add carrot and chili, stir to combine and cook for 2 – 3 minutes.
Place tortilla on a plate, add lettuce, pork (drain if there is excess liquid), tomatoes, grated cheese, pineapple and garnish with coriander.
