Chicken Curry with Potato and Peas …
- 2 large potatoes, peeled and chopped into small cubes
- 2 cups broccoli, cut into florets
- 1 tablespoon olive oil
- 2 cloves garlic, crushed
- 1 teaspoon ginger, crushed
- 1 large onion, sliced
- ¼ cup tikka masala curry paste
- 500 – 600g chicken tenderloins
- 300ml lite cream
- 1 cup frozen peas
- ½ cup greek-style yoghurt
- 2 tablespoons lime juice, freshly squeezed
- Steam potatoes until just tender, drain.
- Steam broccoli until just tender, drain.
- Heat oil in large saucepan; cook garlic, ginger and onions until transparent.
- Add tikka masala curry paste and cook, stirring for approximately 3 minutes, until fragrant.
- Add chicken to pan and cook gently, searing the outside.
- Add cream and simmer gently for approximately 5 minutes or until chicken is cooked through.
- Add potato, peas and yoghurt; stir over low heat for a couple of minutes until peas are heated through.
- Add broccoli and stir in lime juice. Serve with steamed rice and if you like, add raita and naan bread.
