Chicken and Corn Burritos …
Ingredients …
  • 1 x large barbecue chicken
  • 1 x 410g can corn kernels
  • 2 celery sticks, chopped finely
  • 1 ½ cup grated cheddar cheese
  • 1 cup light sour cream
  • 2 cloves garlic, crushed
  • pinch ground chillies
  • 8 x flour tortillas
  • ½ cup grated cheddar cheese, extra
  • ½ cup fresh coriander, chopped
  • 2 limes, cut in wedges
Method …
  1. Remove the meat from the chicken and shred loosely.
  2. Preheat oven to 180C.
  3. Combine shredded chicken, corn kernels, celery, cheese, sour cream, garlic and chilli in a bowl and mix well.
  4. Divide the chicken mixture evenly between the 8 tortillas and spread it lengthways down the middle of each tortilla. Roll each tortilla and lay side by side in a large casserole dish.
  5. Sprinkle burritos with extra cheese and bake uncovered for approximately 20 minutes or until cheese has melted and the burritos have browned slightly.
  6. Remove from the oven, sprinkle with the coriander and serve with the lime wedges.
