Easy Peasy Chocolate Cake …
Ingredients …
  • 2 eggs
  • ⅓ cup milk
  • 1 teaspoon vanilla extract
  • ½ cup butter, melted
  • ½ cup caster sugar
  • ¾ cup self-raising flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking powder
Method …
  1. Preheat oven to 180C. Grease and line a 20cm cake tin and set aside.
  2. Place melted butter, eggs, milk and vanilla extract in bowl and whisk until combined.
  3. Sift caster sugar, self-raising flour, cocoa powder and baking powder into the same bowl as the wet ingredients and whisk together until just combined.
  4. Pour cake batter into prepared cake tin and bake for approximately 25 minutes. Test the cake is cooked by inserting a skewer into the centre, which should come out cleanly.
  5. Allow the cake to cool in the tin for 5 minutes, then turn out onto a wire rack to cool completely. Dust the top of the cake with icing sugar or extra cocoa and top with beautiful, fresh berries.
