Combine lemon juice, lemon rind, olive oil, chilli and salt and mix to combine.
Add lamb cutlets to a casserole dish, pour lemon mixture over the cutlets, cover and refrigerate for approximately 2 hours.
Cook cutlets over a medium heat on either a barbecue or in a frypan until cooked as desired (remember lamb is usually served a little pink on the inside).
Remove from heat and serve with your favourite salad or side dishes.
