Pineapple Bliss Balls … a Nut-Free Treat for School …

Ingredients …
  • 1 ½ packets of Marie Biscuits, crushed
  • 395ml can condensed milk
  • 1 x 440g can crushed pineapple, drained
  • 1 ¼ cups desiccated coconut
  • extra desiccated coconut, for rolling
Method …
  1. Please note: it’s important to drain as much juice as possible from the pineapple otherwise the mixture will be too “wet”. To do this, tip the contents of the can into a strainer and then press out the excess juice with the back of a spoon.
  2. Place crushed biscuits, condensed milk, crushed pineapple and desiccated coconut in a food processor and blend until well combined.
  3. Refrigerate mix for half an hour to firm up a little.
  4. Roll one tablespoonful of mixture into a ball and roll in extra desiccated coconut to coat. Repeat until all mixture has been used.
  5. This recipe will make approximately 22 balls (depending on the size you roll them). Store in the fridge until firm or freeze for up to 2 months.
