Passionfruit and White Chocolate Muffins …

Ingredients …
  • 2 cups self-raising flour, sifted
  • ⅓ cup castor sugar
  • ¾ cups white choc chips
  • ½ cup butter, melted and cooled slightly
  • ⅔ cup milk
  • 2 eggs, lightly whisked
  • ½ cup passionfruit pulp, approximately 5 passionfruit
  • 1 teaspoon vanilla extract
Method …
  1. Preheat oven to 190C (fan forced) and spray a 12-hole muffin pan lightly with cooking oil (or line the pan with wrappers if you prefer).
  2. Combine self-raising flour, castor sugar and white choc chips in a bowl and make a well in the centre.
  3. Whisk melted butter, milk, egg, passionfruit and vanilla.
  4. Pour wet ingredients into dry ingredients and gently fold together until just combined.
  5. Distribute mixture evenly between 12 muffin holes and bake for approximately 16 minutes.
  6. Remove from oven when cooked and allow to stand in muffin tray for 3 – 4 minutes before transferring to a wire rack to cool.
