Sweet Chilli Chicken Tortillas with Tropical Salsa …

Ingredients …
  • 500g chicken tenderloins (or 2 chicken breasts weighing approximately 500g)
  • 1 tablespoon olive oil
  • 3 cloves garlic, crushed
  • 1 lime, zest and juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • pinch cayenne pepper (you may want to leave this out if cooking for children)
  • 1 tablespoon Sweet Chilli Sauce
  • ½ teaspoon brown sugar
  • 2 tablespoons fresh coriander, finely chopped
  • Salsa:
  • 2 Roma tomatoes
  • ½ cup pineapple, finely chopped
  • ½ cup mango, finely chopped
  • ½ cup cucumber, finely chopped
  • 2 shallots, finely sliced
  • 2 teaspoons Sweet Chilli Sauce (optional)
  • lettuce
  • Cheese, grated
  • Coriander, extra
Method …
  1. Combine oil, garlic, lime zest, lime juice, cumin, smoked paprika, cayenne pepper, Sweet Chilli Sauce and brown sugar in a small jug and stir to combine.
  2. Place chicken in a casserole dish. Pour over the mixture and mix through so the chicken is well coated. Set aside to marinate for at least ½ hour but longer if possible.
  3. Cook chicken in a relatively hot pan. Sear each side for approximately 5 minutes or until cooked through, turning each piece once.
  4. Remove from pan and allow chicken to rest and cool slightly whilst you prepare the salsa.
  5. To make the salsa, combine all ingredients and mix well.
  6. To serve, place tortilla on a plate and layer with lettuce, cheese, chicken and salsa. Sprinkle some extra coriander over the top and enjoy!
