1 – 1 ½ cups snow peas (or sugar snap peas), top and tail and slice diagonally

Mix all ingredients for the sauce in a small saucepan. Stir over low heat until mixture starts to simmer. Remove from heat and set aside.
Steam broccoli until just cooked and set aside.
Chop chicken into bite-size pieces and add to wok with oil, ginger and soy sauce. Stir fry until browned and cooked through. Add capsicum, corn and broccoli and stir-fry for 2 minutes.
Add snow peas and shallots and stir-fry for one minute.
Add sauce and noodles and stir-fry for 2 minutes. Serve
