Gingerbread Muffins …

Serves: 12
- 2 cups self-raising flour
- 2 tspns baking powder
- 1 tbspn ground ginger
- 1 tspn ground cinnamon
- ½ cup brown sugar, firmly packed
- 1 cup vegetable oil
- 1 tspn vanilla essence
- 1 cup milk
- 2 eggs
- Preheat oven to 180C and spray a 12-hole muffin pan.
- In a large mixing bowl, sift and combine the self-raising flour, baking powder. ginger, cinnamon and brown sugar.
- In a large jug combine oil, vanilla essence, milk and eggs and whisk with a fork until combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to over mix.
- Distribute mixture evenly between muffin holes and bake for approximately 16 minutes or until a skewer inserted comes out cleanly.
- Remove from oven and allow to sit in tray for approximately 5 minutes then transfer to a cooling rack. This recipe will make 12 muffins.
