Peanut Chicken … on the Table in Around 30 minutes … Really!
- 600 chicken tenderloins
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1 tablespoon butter
- ¼ cup smooth peanut butter
- ½ cup chicken stock
- ¼ cup honey
- 1 teaspoon grainy mustard
- 1 teaspoon curry powder
- Remove any fat and sinew from chicken.
- Combine onion, garlic and butter in a dish and cook on HIGH in the microwave for 3 minutes.
- Stir in peanut butter, stock, honey, mustard and curry.
- Add chicken. Cook on HIGH in microwave for 6 minutes, turn chicken and cook on HIGH for a further 5 – 6 minutes.
- Serve with Jasmine rice and steamed vegetables.
