French Onion Soup …
Ingredients …
  • 50g butter
  • 6 large brown onions, thinly sliced
  • 2 cloves garlic, crushed
  • 2 tablespoons fresh thyme, finely chopped
  • ¾ cup dry white wine
  • 2 tablespoons plain flour (I used gluten free)
  • 6 cups beef stock
  • 1 cup water
  • French bread stick, cut into slices approximately 1 inch thick
  • Grated tasty cheese
  • 1 tablespoons fresh thyme, extra, finely chopped
Method …
  1. In a large saucepan, melt butter over a medium heat. Add onion, garlic and thyme and stir for 15 – 20 minutes or until onion is caramelized.
  2. Add wine and bring to the boil.
  3. Blend flour with a small amount of water, remove saucepan from heat and stir in flour. Return saucepan to stove and cook, stirring until mixture bubbles gently and thickens.
  4. Slowly add beef stock and water stirring continuously. Soup should bubble and thicken.
  5. Reduce heat and allow soup to simmer gently, uncovered for approximately 20 minutes.
  6. While soup is simmering, preheat grill and toast bread stick slices on both sides. Remove from oven, sprinkle one side with grated cheese and return to grill until cheese is nicely melted.
  7. Serve soup into bowls, add 2 – 3 pieces of cheese toasts to each bowl and sprinkle with extra fresh thyme.
