Preheat oven to 200C (fan forced). Spray 2 round cake tins with cooking spray (or 1 larger slice pan)
Sift flour, sugar and salt in a large bowl. Add butter and rub into flour until the mixture resembles breadcrumbs
Make a well in the centre and add milk, chives, dried herbs and cheese. Using a knife, “cut” or mix the dough until it is just combined.
Turn dough onto a lightly floured surface and gently and quickly knead. Press out dough to about 3 cm thick. Cut out scones and then gently knead leftover dough and repeat until all used.
Place scones in cake tin, just touching. Brush surface of scones with extra milk and sprinkle with extra cheese. Bake for 18 – 20 minutes or until lightly browned. Scones will sound hollow when tapped on the top. If there is insufficient dough to fill a second cake tin, knead dough into one large circle also about 3 cm thick, use a knife to mark wedges on the surface so it can be separated after cooking.
