Ingredients …
  • 125g butter, chopped (at room temperature)
  • ¾ cup brown sugar, firmly packed
  • 2 eggs
  • 1 ½ cups self-raising flour
  • 1 teaspooon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • ½ cup ripe mashed banana
  • 2 green apples, peeled and chopped
  • ¼ cup milk
Method …
  1. Preheat oven to 180C. Lightly grease 2 small loaf pans. Line base and sides with baking paper.
  2. In a large bowl, using an electric mixer, cream butter and sugar together until light and creamy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Sift flour, cinnamon and soda together in another bowl.
  5. Into the creamed butter and sugar, fold banana, three-quarters of the apple, milk and flour mixture until just combined.
  6. Spread between loaf pans and sprinkle with remaining apple. Bake for approximately 40 minutes until cooked and test with a skewer. Cool in pan for 5 minutes before turning onto a wire rack to cool completely. Slice and serve (or freeze).
