¼ cup self-raising flour, sifted (I used gluten free)
1 cup plain flour, sifted (I used gluten free)
1 teaspoon bicarbonate of soda
⅓ cup cocoa powder (I used raw cacao)
½ cup white chocolate bits
½ cup milk chocolate bits
½ cup dark chocolate bits

Preheat oven to 180C (or 160C if fan-forced). Line baking trays with baking paper, you may need 3 or 4.
Beat together butter, vanilla extract, sugar and egg in a bowl using an electric mixer until blended and smooth. Stir in both flours (sifted), bicarb soda and cocoa powder. Stir in all chocolate bits.
Drop rounded tablespoons of mixture onto trays. Flatten slightly with fingers and place about 3 – 4 cm apart to allow room to spread.
Bake for 10 minutes. Leave cookies on trays for 5 minutes and then transfer to a wire rack to cool. This recipe will make 20 – 24 cookies depending on the size.
