Pumpkin Soup …
Ingredients …
  • 4 large onions, roughly chopped
  • 3 cloves crushed garlic
  • 1 tablespoon butter
  • 2.5 kg pumpkin of your choice, peeled and chopped into large chunks
  • 2 large potatoes, peeled and chopped into large chunks
  • pinch of salt to taste
  • 6 tomatoes, chopped into large chunks
  • dash of tobasco
  • 8 shortcut bacon pieces, chopped
Method …
  1. Place onions, garlic and butter in a large pot and gently simmer for 2 minutes.
  2. Add pumpkin, potatoes and salt and enough water to just cover.
  3. When pumpkin is almost cooked, add tomatoes and cook for 2 minutes.
  4. Remove from stove, add a dash of tobasco of and blend.
  5. Cook chopped bacon in pan until crispy.
  6. Serve soup and add some bacon.
