Pumpkin Soup …
- 4 large onions, roughly chopped
- 3 cloves crushed garlic
- 1 tablespoon butter
- 2.5 kg pumpkin of your choice, peeled and chopped into large chunks
- 2 large potatoes, peeled and chopped into large chunks
- pinch of salt to taste
- 6 tomatoes, chopped into large chunks
- dash of tobasco
- 8 shortcut bacon pieces, chopped
- Place onions, garlic and butter in a large pot and gently simmer for 2 minutes.
- Add pumpkin, potatoes and salt and enough water to just cover.
- When pumpkin is almost cooked, add tomatoes and cook for 2 minutes.
- Remove from stove, add a dash of tobasco of and blend.
- Cook chopped bacon in pan until crispy.
- Serve soup and add some bacon.
