Cauliflower seems to be one of those vegetables you either love or you hate … there doesn’t seem to be a middle ground with it. I happen to love cauliflower and will eat it no matter how it’s served. Chicken soup is the ultimate comfort food … good for the soul, soothing and, if Grandma was to be believed, it even helped you recover from a cold. Although winter is almost a distant memory, I still love making soup all year round. It’s perfect to freeze and is a quick, easy, nutritious option for lunch or when you need dinner in a hurry. This soup is so delicious and really didn’t take all that long to make. Garnish with some basil and accompany with some toast with melted cheese or parmesan and you’ll have dinner on the table in no time at all. Lamb Shank and Vegetable Soup …

I love soup and nothing warms me in winter quite like a delicious, hearty bowl of homemade soup … a little bowl of goodness!! I haven’t had much success with lamb shanks in the past but I was determined not to give up, so I tried again … and boy, I’m glad I did. As a young teen growing up, Mum and Dad would take us to our local restaurant for a treat, the Oriental Chinese Restaurant. It was located in Southport and had been there as long as I could remember.
