Apple & Sultana Muffins 001

Wow … Christmas has been busy with lots of lunches and dinners to attend so it was lovely later this afternoon to have some quiet time at home which I spent baking. The kids will be back at school before we know it and I love to get a head start on baking morning tea treats to build up a bit of a supply in the freezer. A couple of times each week I’ll include muffins in school lunchboxes and this recipe is just perfect for that. These muffins freeze really well and the grated apple guarantees they’ll be delicious and moist. Enjoy! Apple and Sultana … read more

Slow Cooker Sticky Date Pudding …

Slow Cooker Sticky Date Pudding 002

Recently I shared one of my family traditions … Pudding Day. Every year, about 6 weeks before Christmas, my family gets together to make our Christmas Puddings in the old, traditional way. We use a family recipe that has been handed down through the generations, ingredients are mixed by hand and the puddings are wrapped in calico and hung for 6 weeks before being devoured on Christmas Day. Now, if you haven’t made a Christmas Pudding for this year, there’s still time and this gorgeous Slow Cooker Sticky Date Pudding is a delicious alternative to a traditional … read more

Shredded Beef Tortillas …

Shredded Beef Tortillas 001

Mexican food has always been a hit in my house. This recipe combines our love of Mexican flavours with the richness and melt-in-the-mouth tenderness that comes with any meat that is cooked in a slow cooker. Make sure you brown the meat first before throwing it into the slow cooker. Heat a large frypan, add a little oil and then brown the meat in batches. Be sure the pan is hot before adding the meat otherwise it will stew rather than brown. Brown the meat evenly and quickly and then add it to the slow cooker with the other ingredients. Turn the slow cooker on just … read more

Cheesy Beef and Potato Cottage Pie …

Cheesy Beef & Potato Cottage Pie 001

I love Cottage Pie … easy to make, delicious and packed with veggies … it’s one of those dishes that screams comfort food. I usually prepare the beef filling early in the morning, spoon it into a casserole dish or ramekins and then refrigerate. This makes it easier to spread the potato topping once the filling has had a chance to “set” in the fridge. Using only 500g mince, this dish is also kind on the budget. Peanut Butter Balls …

Peanut Butter Balls 001

There is only one word that adequately describes these little guys … heavenly!!! You will need a food processor to make these but I can honestly say that, after waiting as many years as I have to own one, it’s seriously worth it. I rolled this batch of Peanut Butter Balls in coconut, however, in the past I have also coated them in dark chocolate. The result is a truly decadent treat that allows you to give in to your chocolate urges without consuming an entire block. These will last in the fridge for up to a week but trust me, they wont last that long. I had … read more

Bacon, Tomato and Vegetable Pasta Bake 001

A Pasta Bake will usually find its way onto my Meal Plan at least once a fortnight because, apart from being delicious, it’s quick and easy and a lot of the chopping and preparation can be done earlier in the day. In fact, the whole dish can be created in the morning so that you only need to pop it in the oven at dinner time. I also love that everything goes into a single dish … less washing up! This is one of our family favourites and I love it also because it’s a great way to use up left over vegetables. That’s the beauty of a dish like this … you can add … read more

Rum Balls 002

October is on it’s way to being over and before we know it, the kids will be on holidays once again … time certainly flies! So today I thought I’d share my Rum Ball recipe because I often whip up a couple of batches and the kids present them to their teachers at the end of the term, just a little gift to say thank you for a great year. What I usually do is buy a stack of Christmas mugs, bowls and dishes at the Boxing Day sales where you’ll pay as little as 50 cents for these things.
