Here’s a great muffin recipe that’s perfect for lunchboxes and it’s also a sneaky way to get the kids to eat some more veggies and fruit. This is a yummy, moist muffin and the addition of the chocolate chips will definitely tempt the kids. I used white chocolate chips in these because that’s all I had in the cupboard but it’s easy to switch these out for regular chocolate chips or dark choc chips if you prefer. Enjoy! It’s been a big day of baking here today as I fill the freezer with muffins and other baked goodies in preparation for the kids going back to school and uni. Muffins are perfect because they freeze so well and will last in the freezer for up to 3 months. Apple and Sultana Muffins …

Wow … Christmas has been busy with lots of lunches and dinners to attend so it was lovely later this afternoon to have some quiet time at home which I spent baking. The kids will be back at school before we know it and I love to get a head start on baking morning tea treats to build up a bit of a supply in the freezer. I baked a batch of these just after lunch today so the kids could come home from school and uni to a yummy afternoon tea that would keep them going until dinner. I also love that it presents an opportunity to sit down quietly with the girls and have a chat and catch up about our day before they settle down for homework and assignments.
