Cream of Chicken Soup …

Chicken soup is the ultimate comfort food … good for the soul, soothing and, if Grandma was to be believed, it even helped you recover from a cold. Maybe it does, maybe it doesn’t … who knows but at the very least, this homemade recipe is absolutely delicious! The quantity in this recipe will be enough for dinner with some leftovers as well if you’re feeding a family of 4 or 5. If you plan on freezing the leftovers, I would suggest you separate the portion you wish to freeze before adding the milk (or cream) and the fresh parsley. These can be added when you … read more

Chicken Nuggets … Oven Baked and Homemade …

Chicken Nuggets are an absolute favourite with most kids and if you’re looking for a homemade alternative minus the preservatives, “mystery ingredients” and fat, then this is a recipe you need to try. I used to avoid crumbing my own food but once you get the hang of it, it’s not too bad and the bonus is knowing exactly what’s going into the nuggets. If you haven’t use Panko Crumbs before, you will find them in the Asian section of Coles and Woolworths and they give a crispier and more textured result than an ordinary bread crumb. 5.0 from 1 reviews … read more

Butter Chicken …

We love Indian food in our house and this would be one of our favourite dishes. I love Butter Chicken because it’s so smooth and creamy and this version is very mild … loads of flavour without the spice … so it’s perfect for kids. Serve it with rice and some lovely broccoli or green beans. We also love to treat ourselves with some Garlic Naan Bread from our local takeaway to finish off the meal. Looking for something yummy to feed the kids? Look no further … this recipe is definitely a winner … and wait till you taste the crunchy, cheesy bacon topping! Most kids love pasta and cheese, it’s such a classic combination but the addition of chicken and vegetables make this a healthier option. Chicken and Sweet Corn Soup …

As a young teen growing up, Mum and Dad would take us to our local restaurant for a treat, the Oriental Chinese Restaurant. It was located in Southport and had been there as long as I could remember. If memory serves, it only had room for around eight or nine tables and each one was complete with a red and white vinyl tablecloth, a small vase of plastic flowers and little white salt and pepper shakers. Ahh, the memories! And, of course, our dinner always started with a familiar bowl of hot Chicken and Sweet Corn Soup, so I’ve always had a soft spot for this … read more
