Steamed Christmas Pudding … Gluten-free & Alcohol-free …

Christmas is just around the corner and, if you’re anything like me, I love a beautiful piece of pudding on Christmas Day smothered in vanilla custard … yum … I can taste it already! And although not everyone loves pudding, there are also many who would avoid it either due to gluten intolerance or a preference not to eat anything containing alcohol. For that reason, I’ve created this gorgeous pudding that’s gluten-free and alcohol-free … and, let me tell you, it’s just as delicious, just as beautiful and just as moist as any pudding I’ve tried. It’s also super … read more

Chocolate Fudge Mud Cake …

I’ve tried for a while to find the perfect Chocolate Mud Cake recipe but couldn’t find one I was happy with. I’d get excited with each new attempt but was never overly thrilled with the result. Not only that, but I’ve had some epic fails in the process. So, what’s a girl to do when she can’t find the perfect recipe … create her own! I’ve played with this recipe for the last month or so, tweeking it with each attempt and am pleased to report success! Delicious, decadent, delectable and delightful are just some of the adjectives that hubby’s used and he even … read more

Raspberry Banana Loaf …

This Raspberry Banana Loaf is one of my hubby’s favourites, so I bake it quite often. He loves it fresh out of the oven and will slice off a big chunk to eat while it’s still hot. Once it’s cooled though, I slice all the loaves quickly, pop each slice into a snack-size zip lock bag and then get them into the freezer pronto so that I have morning teas ready to go for the week ahead. I always use my favourite small loaf tins, which measure 18 cm x 8 cm. This recipe will make 3 small loaves and I usually get around 8 slices from each one. This is so simple … read more

Apple Spice Loaf …

It’s no secret that I love any recipe that can be whipped up in a single bowl and this Apple Spice Loaf is one such recipe. Divinely simple and just as delicious, I guarantee this will become a firm favourite. This loaf is so moist and freezes beautifully, making it perfect to bake on the weekend to freeze for lunchboxes through the week. I have used two of my favourite smaller loaf tins for this recipe because I find I get a more consistent texture through each of the loaves. I bought them from Daiso and use them a lot when I bake. They measure 18 cm long x 8.5 … read more

Date and Orange Loaf …

This Date and Orange Loaf is a delightful combination of flavours. Once again I’ve used my two favourite smaller loaf tins for this recipe. They are just the perfect size and I find I get a more consistent texture through each of the loaves. I bought them from Daiso and use them a lot when I bake. They measure 18 cm long x 8.5 cm wide x 6 cm deep. You could bake this as a single loaf in a larger tin but you would need to adjust the cooking times and bake these for a little longer to cook them all the way through … maybe an extra 10 – 15 minutes. Once cooked, allow … read more

Lemon Cupcakes …

Talk about a blast from the past! I was organising my cookbooks on the weekend and I stumbled across some recipes from my Home Economics class from my school days. There were some golden oldies amongst the pages like Rock Cakes, Anzac Biscuits, Scones, Chocolate Brownies and many more but also this recipe for Lemon Cupcakes. I’ve made these so many times that I know the recipe off by heart but I must admit, I had forgotten the recipe’s origin. This is a tried and true recipe that I’ve made so often that I just know it will turn out every single time and I guess … read more

This is one of my favourite cupcake recipes and it’s perfect if you want to create a special dessert to celebrate Valentine’s Day with that someone special in your life. Of course, these Red Velvet Cupcakes don’t need to be saved just for Valentine’s Day and are a gorgeous twist on your traditional cupcake. Banana Maple Bread …

I love a good Banana Bread and this is a bit of a twist on a well-loved favourite … easy to make, absolutely delicious, sweet, moist and it freezes beautifully. This recipe will make three small loves so I usually whip it up on the weekend when no-one’s around (otherwise it gets eaten straight from the oven and disappears), wait for it to cool, slice it and then freeze the pieces individually ready for lunches the next week. If I’m making this for school lunches, I leave out the walnuts. I’ve also recently found this 100% pure maple syrup at Woolworths. I … read more

One Bowl Choc-Orange Cake …

Absolute simplicity is all that’s needed to describe this Choc-Orange Cake. Measure out the ingredients and throw them all in together in one bowl, it can’t get much easier … it also makes washing up a breeze. I love the hint of orange that gives this cake a beautiful citrusy flavour. Here are a couple of tips to ensure you have success with this recipe: Make sure you line both the base and sides of the cake tin to prevent the sides and top of the cake from drying out. If possible, use a light coloured cake tin rather than a dark/black one. Dark … read more

Taking Shortcuts at Christmas with Cake 2 the Rescue …

Don’t be completely fooled by the title of my blog … Mrs Organised! It does describe me most of the time but there are also occasions when I feel like a bit of a fraud … and this Christmas has proved to be one such time. Hubby and I went overseas for most of October and I feel like I’ve been on the back foot ever since. I haven’t planned the menu for Christmas Day yet, only half our decorations have made it out of the box and I haven’t bought a single a Christmas present yet … normally I’m done by the end of November. But, when all is said and done, I … read more

Slow Cooker Chocolate Christmas Pudding …

As long as I can remember, our family has always served a traditional Christmas Pudding on Christmas Day. It’s such a tradition that we even get together, about 6 weeks before Christmas, to make our puddings in cloths using a fourth-generation recipe that our kids are now learning. After the puddings are prepared and cooked, they’re hung in the garage so the flavour can really develop, you can read more about that here. Sadly though, the traditional Christmas Pudding doesn’t appeal to everyone and most kids will usually turn their noses up when it’s served. … read more

Pear and Walnut Loaf …

This is a quick and easy recipe you can whip up if friends call to say they’re coming for morning tea. Deliciously moist, I just love the combination of the nutty flavour from the walnuts and the sweetness from the pears. Just keep a tin of pears in the pantry and you should have everything else. For this recipe, I used the Coles Australian Pear Slices, which I drained and chopped into small pieces. I was really happy with the quality, as the pears were nice and firm and not mushy. Enjoy! The Day I was SAVED by Cake 2 The Rescue & a Giveaway!

I have a huge family and, at last count, have in excess of 30 nieces and nephews … hard to believe … but it’s true! And because we’re such a close family, there’s always a birthday or other event to celebrate. One of my little nieces had a birthday coming up and my sister was fretting over how she was going to find time to bake a cake because she was just so busy. Around the same time, I was contacted by the lovely Lou Duggan from Cake 2 the Rescue to see if I would be interested in trying and reviewing one of her Cake Kits. Well, I didn’t need to be asked … read more
