This recipe for Slow Cooked Apricot Pork is an absolute winner for me because it’s just sooooo easy and only needs 6 ingredients! It’s one of those dishes that is perfect for a night when I know I’ve got a lot going on and I won’t have much time to cook dinner. I often prepare this dish the night before putting all the ingredients in the slow cooker bowl, covering and refrigerating until morning. Then all I need to do is put the dish in the slow cooker, flick the “on” switch and dinner takes care of itself … not only that, it’s absolutely delicious … love it! Tip: I use Pork Fillet for this recipe which I buy from Aldi …the quality is fantastic and it’s much cheaper than the Supermarket or Butcher. Also, I often cook 3 pork fillets … perfect if you’re feeding a hungry hoard but mostly it means we have ample leftovers for dinner/lunches the next day.
- 2 x large onions (white or brown), peeled, halved and sliced thickly
- 2 x pork fillets, sliced into 1 inch thick pieces
- 3 – 4 medium carrots, peeled and chopped into chunks
- 1 x 40g French Onion Soup sachet
- 2 x cans Apricot Nectar Fruit Drink
- Cornflour (to thicken)
- Starting with the onion, layer the onion with the pork loosely in the slow cooker.
- Add the chopped carrots.
- Sprinkle the French Onion Soup sachet across the top of the pork, onion and carrots.
- Add the Apricot Nectar and stir through gently.
- Cook on low for 7 hours.
- Combine 3 tablespoons cornflour mixed with a little water and stir through just before serving to thicken.
