This recipe for Choc Orange Choc Chip Cookies is a wonderful twist on the standard Chocolate Chip Cookie … and they’re the “bee’s knees”. Miss 19 was a bit reluctant to try them at first, as she isn’t a big fan of oranges, but once I coaxed her she loved them … couldn’t get enough of them, in fact! Suitable to freeze, these are great for morning or afternoon tea and kid’s school lunchboxes. Enjoy!
- 3 ½ cups plain flour
- 2 teaspoons cornflour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup brown sugar, firmly packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 2 tablespoons orange juice, freshly squeezed
- 1 x 200g packet chocolate chips
- Preheat oven to 180C and line baking trays with baking paper.
- In a large mixing bowl, combine plain flour, cornflour, baking powder and salt.
- In the bowl of an electric mixer, whip the butter, white sugar and brown sugar, until light and fluffy for approximately 4 minutes.
- Mix in eggs, one at a time, mixing well after each additiion.
- Mix in vanilla extract, orange zest and orange juice.
- Remove bowl from mixer, add dry mixture and chocolate chips and stir gently until just combined.
- Drop tablespoons of mixture onto prepared baking trays. Leave a little space between each cookie as they will spread while baking. Bake for approximately 10 minutes.
- Remove cookies from oven, allow to cool for 2 minutes on baking trays before transferring to a wire rack to cool completely.
- These cookies are suitable to freeze and the mixture will make 50 – 55 cookies (depending on their size).
