This Indonesian Pork and Vegetable Stir-Fry is a quick and easy meal the whole family is sure to love because it’s sooooo delicious! I usually save this recipe for those nights when I’m really pushed for time and need to get dinner on the table pronto! Enjoy!
Indonesian Pork and Vegetable Stir-Fry …
Ingredients …
- 2 tablespoons kecap manis
- 1 tablespoon oyster sauce
- 1 teaspoon fish sauce
- 1 teaspoon sambal oelek
- 1 tablespoon brown sugar
- 2 cloves garlic, crushed
- 1 large red chilli, finely sliced with seeds removed
- 500g pork mince
- ½ cup green beans, thinly sliced
- ½ cup snow peas, thinly sliced
- 1 small yellow capsicum, seeded and thinly sliced
- 3 shallots, finely chopped
- 1 x pkt Chang’s Crunchy Noodles
Method …
- In a jug, combine kecap manis, oyster sauce, fish sauce, sambal oelek and brown sugar and stir until sugar dissolves. Set aside.
- Heat one tablespoon oil in a wok or non-stick pan, add garlic and chilli and stir-fry for approximately 2 minutes.
- Add pork mince to wok and cook for approximately 5 minutes.
- Add sauce mix, green beans, snow peas and capsicum and stir-fry for 2 minutes.
- Stir through shallots and serve with jasmine rice and Chang’s Crunchy Noodles.
- Kecap Manis is a sweet soy sauce that is very dark with a thick consistency. It can be found in the Asian food section of most supermarkets.
