I have a real sweet tooth and every now and then I crave chocolate! Do you know the feeling? I’ll take it any way it comes but I do have a soft spot for this particular Slice … I think because it satisfies my love of chocolate but I also think I’m drawn to the coconut flavour as well. It’s a simple recipe that looks good and tastes even better. I usually decorate my Slice with Freckles but really, you could use anything that takes your fancy. This is also a great recipe to whip up if you’re throwing a kids party because you can make it ahead of time and freeze it. Enjoy!
- 4 weetbix, crushed
- ¾ cup plain flour
- 1 cup desiccated coconut
- 1 cup sultanas
- ½ cup castor sugar
- ¼ cup cocoa
- ¾ cup melted butter
- 1 ½ teaspoons vanilla extract
- 200g milk or dark chocolate, melted
- Chocolate freckles (or other lolly/candy for decoration)
- Preheat oven to 180C and line a brownie tray with baking paper.
- Blend the weetbix, flour, coconut, sultanas, sugar, cocoa, butter and vanilla extract in a food processor until well combined and crumbly.
- Press the mixture into the prepared brownie tray. Bake for 17 – 20 minutes until firm, remove from oven and set aside to cool.
- Melt the chocolate, spread over the top of the slice and decorate with the Freckles (or other lolly/candy).
- Place in the fridge to cool, remove slice from tray and cut into small squares.
