This is a quick and easy dinner that is very popular in my household. This recipe does make a very generous serve that would easily feed 6 people or use the leftovers for lunch the next day. Enjoy!
Ham, Pea and Mushroom Fettucini …

Ingredients …
- 250g packet fettucini
- 1 tablespoon butter
- 8 – 10 large fresh mushrooms
- 1 cup diced ham
- 1 cup cooked green peas
- 3 shallots, sliced finely
- 4 egg yolks
- 1 ¼ cups light cream
- pinch of nutmeg
- salt and pepper, to season
- ⅓ cup grated parmesan cheese
Method …
- Add pasta to boiling water, cook for 8 – 10 minutes until just tender, drain and set aside.
- In a large fry pan, heat the butter until melted and sauté the mushrooms.
- Add ham, peas and shallots, cook stirring for 1 minute then remove from heat and set aside.
- Beat the egg yolks with the cream, nutmeg, salt and pepper.
- Return the large frypan to a low heat, add pasta to the mushroom mixture, pour the cream mixture over the top and toss to combine all ingredients.
- Add the parmesan cheese and stir through until melted. Serve.
