San Choy Bow

There’s no need to spend money on expensive takeaway when you can create gorgeous dishes like San Choy Bow in your own kitchen. This is such a hit with my kids, is often requested and disappears before my eyes once it’s served. It’s also quick and easy to make and super healthy using beautiful, fresh ingredients. Enjoy!

  • 1 tablespoon vegetable oil
  • 2 small onions, chopped finely
  • 2 sticks celery, chopped finely
  • 500g pork mince
  • 2 teaspoons ginger
  • 1 tablespoon soy sauce
  • 2 tablespoons oyster sauce
  • 1 small can water chestnuts, sliced
  • 1 cup beansprouts
  • ⅓ cup shallots,
  • extra shallots to garnish
  • 1 x iceberg lettuce
Method …
  1. Add oil and onions to a medium saucepan and stir fry until onion just begins to soften.
  2. Add celery and stir fry for a further 2 minutes.
  3. Add pork mince, break up with a fork and stir fry until cooked.
  4. Add ginger, soy sauce and oyster sauce. Stir through until well combined and simmer gently for 2 – 3 minutes until some of the liquid evaporates.
  5. Add water chestnuts, beansprouts and shallots and stir fry for 1 minute. Be careful not to overcook as it’s best if they retain a crunchy texture.
  6. Remove leaves from head of lettuce trying hard not to tear the leaves to create a lettuce cup. Place lettuce cup in a bowl and spoon 2 – 3 large spoonfulls of pork mixture into each lettuce cup. Roll up and enjoy.
