Ingredients …
- ⅔ cup plain flour
- ½ cup cocoa
- ¼ teaspoon baking powder
- ½ cup melted butter
- 100g good quality dark chocolate (I used Plaistowe by Nestle)
- 3 eggs
- 1 teaspoon vanilla extract
- ¾ cup castor sugar
- ½ cup chopped walnuts (optional)
Method …
- Preheat oven to 165C (fan-forced). Lightly spray a brownie pan and line with baking paper.
- Sift flour, cocoa and baking powder together and stir to combine. Set aside.
- Place butter and chocolate in a large saucepan and heat gently until both have just melted. Stir to combine. Remove from heat and allow to cool a little.
- Once chocolate mixture is cool, add eggs, vanilla extract, sugar and flour mixture and whisk until just combined. Stir through walnuts (if desired).
- Pour mixture into prepared brownie tin and bake for 14 – 15 minutes.
- Remove from oven and allow to cool in the pan for 5 minutes. Lift onto cooling rack to cool completely. Using a sharp knife, slice into approx. 12 squares. Dust with either icing sugar or cocoa powder and serve.
