Dark Chocolate and Orange Muffins …

Ingredients …
- 2 cups self-raising flour
- ½ cup cocoa powder
- ¾ cup castor sugar
- 1 cup light sour cream
- 2 eggs
- 2 tablespoons orange zest
- 1 teaspoon vanilla extract
- ½ cup vegetable oil
- ¼ cup orange juice, freshly squeezed
- ¾ cup dark chocolate chips
Method …
- Preheat oven to 180C (fan forced) and line a 12-hole muffin pan with large wrappers.
- Place self-raising flour, cocoa and castor sugar in a bowl and stir to combine.
- Place sour cream, eggs, orange zest, vanilla extract, vegetable oil and orange juice in a separate bowl/jug and whisk until the mixture is smooth.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Add chocolate chips and stir through.
- Spoon the mixture evenly between the 12 muffin holes and bake for approximately 18 – 20 minutes.
- Once cooked, remove from oven. Allow to stand in the muffin tray for a couple of minutes before transferring muffins to wire racks to cool completely.
