Pear and Walnut Loaf

This is a quick and easy recipe you can whip up if friends call to say they’re coming for morning tea. Deliciously moist, I just love the combination of the nutty flavour from the walnuts and the sweetness from the pears. Just keep a tin of pears in the pantry and you should have everything else.

For this recipe, I used the Coles Australian Pear Slices, which I drained and chopped into small pieces. I was really happy with the quality, as the pears were nice and firm and not mushy. Enjoy!

Ingredients …
  • 1 ½ cups self-raising flour
  • ½ cup firmly packed brown sugar
  • ½ cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¼ cup butter, melted
  • 1 x 400g can pear slices, drained and chopped into 1cm cubes
  • ½ cup walnuts, coarsely chopped into small pieces
Method …
  1. Preheat oven to 160C, spray two small loaf pans very lightly with cooking spray and line with baking paper.
  2. In a mixing bowl, add flour and brown sugar and use a whisk to combine and break down any lumps.
  3. In a separate bowl combine the milk, eggs, vanilla extract and butter and mix to combine.
  4. Add wet ingredients to flour mixture, along with the pears and ¾ of the walnuts and mix until just combined.
  5. Distribute mixture evenly between prepared pans and sprinkle the top of each loaf with the remaining chopped walnuts. Bake for approximately 30 – 35 minutes. Once cooked, remove from oven, lift loaves from pans, remove baking paper and transfer to a wire rack to cool. Slice and enjoy!
