This is one of Mum’s recipes and my favourite chocolate cake in the whole wide world. It’s soooo easy to make because everything just gets thrown into a single bowl and whisked … no fancy ingredients, no electric mixers and very little mess … love it! And the result is a delicious, light, fluffy cake with just the right amount of chocolate.

This little delight takes about 10 minutes to throw together, so next time someone calls and says they’re coming for a surprise visit, here’s the answer to your prayers.

And if you want to feel a little less guilty, don’t ice the cake! I very rarely ice a cake because that’s where a lot of calories like to hide … those sneaky little devils. Instead, try dusting your cake with either icing sugar or a little extra cocoa and then throw on some fresh berries or other fruit.

Easy Peasy Chocolate Cake …
Ingredients …
  • 2 eggs
  • ⅓ cup milk
  • 1 teaspoon vanilla extract
  • ½ cup butter, melted
  • ½ cup caster sugar
  • ¾ cup self-raising flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking powder
Method …
  1. Preheat oven to 180C. Grease and line a 20cm cake tin and set aside.
  2. Place melted butter, eggs, milk and vanilla extract in bowl and whisk until combined.
  3. Sift caster sugar, self-raising flour, cocoa powder and baking powder into the same bowl as the wet ingredients and whisk together until just combined.
  4. Pour cake batter into prepared cake tin and bake for approximately 25 minutes. Test the cake is cooked by inserting a skewer into the centre, which should come out cleanly.
  5. Allow the cake to cool in the tin for 5 minutes, then turn out onto a wire rack to cool completely. Dust the top of the cake with icing sugar or extra cocoa and top with beautiful, fresh berries.
