Curry Beef and Tomato Meatballs

This is a simple recipe that will appeal to most kids. The curry is very mild and just adds a hint of extra flavour to the beautiful, rich tomato base. This is a really generous recipe that will create around 32 meatballs that are similar in size to a golf ball. My family loves this recipe and it’s usually very quiet around the dinner table when this is on the menu. Enjoy!

  • 1kg heart smart beef mince
  • 1 medium onion, grated
  • 1 egg
  • 1 clove garlic, crushed
  • ½ cup breadcrumbs
  • 1 tablespoon dried parsley
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 1 tablespoon ginger
  • 1 teaspoon garam masala
  • ½ teaspoon groung cumin
  • ½ teaspoon ground turmeric
  • 1 x 800g can crushed tomatoes
  • ¼ cup fresh coriander leaves, chopped
Method …
  1. Combine beef mince, grated onion, egg, 1 clove crushed garlic, breadcrumbs and parsley In a bowl and, using your hands mix well. Roll into approximately 32 balls (roughly the size of a golf ball). Set aside.
  2. In a large fry pan, add the oil, onion and remaining 3 cloves of crushed garlic and lightly fry for 2 – 3 minutes.
  3. Add ginger, garam masala, cumin, turmeric, tomatoes and meatballs and bring to a gentle simmer. Simmer gently for approximately 5 minutes, turn meatballs and simmer for a further 5 minutes or until meatballs are cooked through.
  4. Serve with steamed rice and sprinkle with fresh coriander leaves.
