I love muffins and I love apples. Put those two things together, I’m a happy girl and you come up with possibly the most amazing Apple Crumble Muffins ever! True … and they are even more amazing when you eat them hot straight from the oven. How do I know this? Because at least two of these find there way into my tummy before making it into the freezer.

I love this recipe because it only uses a little bit of butter, yummy greek yoghurt which makes them a little healthier and they come out deliciously moist. And those chunks of apple once they’ve been baked add more than enough sweetness. I hope you enjoy these as much as I do!


Apple Crumble Muffins …

Ingredients …
  • 2 cups plain flour
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • ¾ cup white sugar
  • 2 large eggs
  • 1 cup Greek Yoghurt (full fat)
  • ¼ cup butter, melted
  • 1 ½ teaspoons vanilla extract
  • 1 ¾ cup Granny Smith apples, peeled and chopped into small pieces
  • Crumble Topping …
  • 3 tablespoons brown sugar
  • 2 tablespoons plain flour
  • ¼ teaspoon ground cinnamon
  • 1 ½ tablespoons butter, cold
Method …
  1. Preheat oven to 190C and lightly grease 2 muffin trays. This recipe will make 15 medium-sized muffins.
  2. Combine the plain flour, baking powder, cinnamon and white sugar in a large bowl and mix to combine.
  3. In a separate bowl, beat the eggs and add the greek yoghurt, butter and vanilla extract and stir to combine.
  4. Add the wet mixture to the dry ingredients and mix until just combined. Gentle fold in the apple pieces.
  5. Divide the mixture evenly between 15 muffin holes filling each one to approximately three quarters full.
  6. To create the topping, combine brown sugar, flour, cinnamon and butter. Mash the butter into the other ingredients until the mixture resembles rough crumbs.
  7. Sprinkle approximately 1 teaspoonful of topping over each muffin.
  8. Bake muffins for approximately 15 – 16 minutes and check they are fully cooked by inserting a skewer which should come out clean. Leave muffins to sit in the tray for approximately 5 minutes before moving muffins to a wire rack to cool completely. These muffins are suitable to freeze.
