Honey Muffins

Well, if you love honey as much as Winnie the Pooh, you’re going to love these little muffins. These are quite dense but so sweet and delicious. Enjoy!

Ingredients …
  • 2 ¼ cups plain flour
  • ½ cup sugar
  • 3 teaspoons baking powder
  • 1 egg
  • 1 cup milk
  • ¼ cup butter, melted
  • ⅔ cup honey
Method …
  1. Preheat oven to 180C (fan-forced).
  2. Lightly grease a 12 hole muffin tray or line with cup cake wrappers.
  3. Combine plain flour, sugar and baking powder in a large bowl and stir to combine.
  4. In a smaller bowl, combine the egg, milk, butter and honey and stir to combine. It might take a little bit of stirring to get the honey to fully blend with the other wet ingredients.
  5. Add wet mixture to dry ingredients and stir until just combined.
  6. Spread mixture evenly between the 12 muffin holes and bake for approximately 17 – 18 minutes or until a wooden skewer inserted into the middle comes out cleanly.
  7. Transfer muffins to a wire rack to cook completely. These muffins are suitable to freeze.
