Who doesn’t love a deliciously soft, gooey Chocolate Chip Cookie … one that melts in your melt and begs you to eat just one more!
Well, these cookies certainly fit that description and my only advice would be to get them into the freezer once they’ve cooled or they just might vanish right before your eyes. This is a great little recipe because it also goes a long way to create 60 cookies that freeze perfectly. Enjoy!
- 1 ¾ cups brown sugar
- 1 cup butter, softened
- 2 large eggs
- 1 tablespoon vanilla
- 3 cups plain flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 cups chocolate chips
- Preheat oven to 180C.
- Cream sugar and butter together.
- Add eggs and vanilla and mix well until combined.
- Add plain flour, baking powder and salt and mix until combined.
- Stir in chocolate chips.
- Scoop heaped teaspoons of cookie dough onto cookie trays that have been lined with baking paper. Use your fingers to shape the dough into a rough ball shape and flatten slightly with your fingertips. Place cookies approximately 3 cm apart.
- Bake for approximately 10 minutes. Allow cookies to cool for a minute or two before transferring to a wire rack to cool completely. These cookies are suitable to freeze.
Clever Tricks, Tips and Hints …
- Use butter only for this recipe as substitution with margarine won’t give you the same result.
- Test the cooking time for your own oven. Ten minutes in my oven is perfect to get the soft, chewy consistency. Your oven may be a minute more or a minute less.
- I didn’t use a mixer for this particular recipe and mixed all the ingredients by hand.
- Any flavour chocolate chip or a combination of all three i.e. white, milk or dark, works well.

This is such a great recipe, Lucy that’s so easy to make. My kids love these so much they’ve even started eating them straight from the freezer … not quite sure how I’m going to overcome that one!
