These cookies are so easy using simple ingredients and only taking about 15 minutes to mix. They’ll be a huge hit with the kids and are perfect in lunchboxes for a morning tea treat or great as an after school snack with a lovely glass of icy cold milk! These cookies are also great to serve at a child’s birthday party because they are so cute and bright! I love this recipe because it stretches a long way, making approximately 30 – 32 cookies. Enjoy!
- 100g butter, melted and cooled
- ½ cup castor sugar
- 1 ½ teaspoons vanilla essence
- 1 egg, lightly beaten
- 1 ½ cups self-raising flour
- Freckles or Smarties for decoration
- Preheat oven to 160C (fan-forced) and line 3 large biscuit trays with baking paper.
- In a large bowl, combine butter, sugar, vanilla essence and egg. Add the self-raising flour and mix well until all ingredients are combined.
- Refrigerate cookie dough for 15 – 30 minutes or until firm.
- Remove cookie dough from fridge and roll 2 teaspoons of mixture into balls. Place on prepared trays, leaving 2 – 3 cm between each cooking to allow for spreading. Using the palm of your hand, flatten each ball of dough slightly and decorate the tops with either Freckles or Smarties.
- Bake for approximately 12 minutes or until the cookies are lightly golden. Remove trays from oven and allow to stand for 5 minutes before transferring cookies to a wire rack to cool.
- These cookies will store in an air-tight container for approximately 1 week (if they last that long).
