I think I’ve found my new favourite muffin! And that’s a pretty big call because I’ve baked some delicious ones in my time. If you love passionfruit, you’ll love these and if you’re partial to a bit of white chocolate as well, then let’s just say you’ll be in heaven. Enjoy!
Passionfruit and White Chocolate Muffins …

Ingredients …
- 2 cups self-raising flour, sifted
- ⅓ cup castor sugar
- ¾ cups white choc chips
- ½ cup butter, melted and cooled slightly
- ⅔ cup milk
- 2 eggs, lightly whisked
- ½ cup passionfruit pulp, approximately 5 passionfruit
- 1 teaspoon vanilla extract
Method …
- Preheat oven to 190C (fan forced) and spray a 12-hole muffin pan lightly with cooking oil (or line the pan with wrappers if you prefer).
- Combine self-raising flour, castor sugar and white choc chips in a bowl and make a well in the centre.
- Whisk melted butter, milk, egg, passionfruit and vanilla.
- Pour wet ingredients into dry ingredients and gently fold together until just combined.
- Distribute mixture evenly between 12 muffin holes and bake for approximately 16 minutes.
- Remove from oven when cooked and allow to stand in muffin tray for 3 – 4 minutes before transferring to a wire rack to cool.

I am still only harvesting one passionfruit per day. It will take me nearly a week to be able to make one batch of these muffins! I do love passionfruit and they pair very well with white chocolate. What tasty muffins these must be! xx
