Today I found some rather sad looking bananas in my fruit bowl, and rather than throw them out, I decided to whip up some Date and Banana Muffins. Perfect to freeze and pop in the kid’s lunch boxes.
Date and Banana Muffins …

Ingredients …
- 1 ½ cups fresh dates (approx. 13 large dates), pitted and chopped into small pieces
- ½ cup butter
- 1 tspn Bicarb Soda
- 1 ¼ cups water
- 2 cups self-raising flour
- ½ cup brown sugar
- 1 tspn cinnamon
- 2 eggs lightly beaten
- 1 ½ tspns vanilla
- 3 medium bananas, peeled and mashed
Method …
- Preheat oven to 180C and spray and lightly grease two 12-hole muffin trays.
- Place dates, butter, water and bicarb soda in a small saucepan, bring to the boil, cook for 30 seconds, remove from heat and set aside to cool.
- Sift self-raising flour, sugar and cinnamon into a bowl and make a well in the centre.
- Add date mixture, eggs, vanilla and bananas and stir to combine. Be careful not to over mix, mixture should be lumpy.
- Spoon mixture into lightly greased muffin trays and fill each muffin hole approximately three quarters. Mixture will make approximately 20 muffins.
- Bake for approx. 19 – 20 minutes or test with a skewer which should come out cleanly.
- Remove from oven and place muffins onto cooling rack.

Me too, Charlie … gone are the days of throwing out over ripe bananas, especially when you can whip up a batch of muffins in around 20 minutes. I also love anything baked with banana because it tends to be really moist!
