I love Chinese food and this recipe for Beef Chow Mein is super easy and really delicious. My kids love it and always come back for seconds. I usually chop all the veggies throughout the day to save time at dinner and then I can create this meal in no time at all. And the best news of all … it can be cooked in a single wok (or pan) and then served in individual bowls … so washing up is a snap! Changs Crunchy Noodles can be found in the Asian food section at most supermarkets.

Ingredients …
  • 250g heart smart mince
  • 2 sticks celery, chopped
  • 1 onion, chopped
  • 1 cup carrot, grated
  • 1 teaspoon curry powder
  • 3 – 4 tablespoons soy sauce
  • 1 packet chicken noodle soup
  • ½ teaspoon mustard
  • ½ small cabbage, shredded
  • 1 x 225g packet thin Hokkien noodles
  • 1 bunch broccolini (or small broccoli), chopped and steamed
  • 1 cup snow peas, sliced in half (or 1 cup green beans, halved)
  • 1 packet Changs Crunchy noodles
Method …
  1. Lightly sauté mince in wok (or pan) with a dash of oil.
  2. Add celery and onion and stir-fry for 2-3 minutes.
  3. Add carrot and stir-fry for a further minute.
  4. Add curry powder, soy sauce, chicken noodle soup and mustard and stir gently.
  5. Add cabbage and stir-fry until just tender.
  6. Add noodles to wok, stir through mince and vegetables and cover wok for 1 – 2 minutes until noodles are tender.
  7. Add steamed broccolini (or broccoli) and snow peas (or green beans) and stir through (If you like the snow peas crunchy, add them at the last minute and be careful not to overcook).
  8. Serve the Chow Mein into individual bowls and top with the crunchy noodles.
