I’ve always been lucky that my kids love broccoli but if your little munchkins give it the cold shoulder, here’s a yummy soup recipe that they just might be willing to try. My guys gobble this one up as soon as the plate hits the table. This will make enough for two meals, freezes beautifully and is super quick and easy. Enjoy!

Ingredients …
  • 2 tablespoons butter
  • 1 onion, diced
  • 1 carrot, peeled and roughly chopped
  • 1 potato, peeled and cut into small cubes
  • 2 sticks celery, chopped
  • 1 clove garlic, crushed
  • 1 litre chicken stock
  • 750g broccoli, (chopped and include flowerettes, leaves and stem)
  • 1 cup milk
  • Salt
  • Dash of cumin
  • Parmesan, grated
Method …
  1. Melt 2 tablespoons butter in a large saucepan and saute onion, carrot, potato, celery and garlic until tender.
  2. Add broccoli flowerettes, leaves and stem and chicken stock and simmer, covered for approximately 15 minutes until tender. Puree soup until well blended and return to saucepan.
  3. Season with salt and serve. Sprinkle with parmesan and garnish with some chopped walnuts or almonds.

Clever, Tricks, Tips and Hints …

  • Don’t be afraid to cook the entire broccoli including the leaves and the steam. Just remember to chop the stem into smaller pieces as it will take longer to cook than the flowerettes.

  • Be careful not to overcook the broccoli flowerettes or they will lose their vibrant green colour and the soup will appear dull.

  • Freeze any leftovers in single serves in zip lock bags and then you will have soup on hand if you want a quick, healthy lunch.

  • If serving this for dinner, fill the meal out with some toasted bread placed under the grill with some cheese until melted … yum!

  • For a creamier texture for the soup, add cream instead of milk.
